Sorry I can't help you with the adapter plate/manifold question, but if in fact the p[lates do work, I would go with a single plane manaifold.
And don't be surprised if you have a VERY streetable 450 HP.
Are you going to run the stock iron heads? If so, go with the open chamber ones, because I don't think you'l get 11:1 to work on the gas available.
If you had a set of aluminum heads, I'd say GO FOR IT!
I used to have a '72 352CJ Mustang - the 71.5 CJ engine in it. It had the open chamber heads.

There's a guy here, darn if I can remember his handle, that put a 351 in his boat, standard 351w with aftermarket heads, he used a ported truck 351W EFI lower intake with a home built upper plenum to a two barrel truck EFI throttle body, it was really low profile and commented that the boat the engine was in ran like crazy.
As far as the adaptor is concerned, they usually work good, but some amount of trial and error is involved to get the ports to line up without leaks, you will probably have some port matching to do to match them to your 4bbl Cleveland heads. I see they recommend the port inserts as well, probably a good idea given the port mismatch you would have without them.
